A pasteurized cheese that was developed in Wales. This mild, yet favorable cheese was traditionally used as the main ingredient in Welsh Rarebit. This creamy cheese sauce served over toasted points shows off the wonderful nutty flavor of the cheese. We refer to it as “a late bloomer cheese”, the flavor does not come at the beginning of the cheese but is a wonderful sensation in your mouth at the end.
