This raw milk cheddar was developed by cheesemaker. She used a recipe she found in an old British book full of recipes and details of different farmstead processes of making cheddar cheese as the basis for the recipe. The cheese has creamy texture with a sharp cheddar flavor after it ages for at least 6 months. The farmer says it is best after it ages a year of more.
